Vegan Quinoa Tacos

Vegan Quinoa Tacos
  1. 1 ½ cup water
  2. 1 cup organic red quinoa
  3. 1 pack of taco shells
  4. 1 packet of taco seasoning
Suggested toppings
  1. 1 medium-sized tomato
  2. 1 ripe mango, sliced
  3. ¼ of a red onion, chopped
  4. mixed greens
  5. chopped cilantro
  6. 1 small lime, cut into wedges
  1. 1. Soak the quinoa in a bowl for at least 4 hours. The water level should just cover the quinoa.
  2. 2. Pour soaked quinoa and water in a medium saucepan.
  3. 3. Bring quinoa and water to a boil.
  4. 4. When the water reaches a boil, cover and simmer for 10-20 minutes.
  5. 5. While the quinoa is simmering, dice the tomato, onion, mango, and cilantro.
  6. 6. Once the quinoa has absorbed all the water and is soft, mix in one packet of taco
  7. seasoning.
  8. 7. Heat the taco shells in the microwave for 30 seconds.
  9. 8. Stuff taco shells with seasoned quinoa and toppings to taste. Flavor with a lime wedge.
  10. Yields approximately 8-10 tacos.
