- 1 ½ cup water
- 1 cup organic red quinoa
- 1 pack of taco shells
- 1 packet of taco seasoning
- 1 medium-sized tomato
- 1 ripe mango, sliced
- ¼ of a red onion, chopped
- mixed greens
- chopped cilantro
- 1 small lime, cut into wedges
- 1. Soak the quinoa in a bowl for at least 4 hours. The water level should just cover the quinoa.
- 2. Pour soaked quinoa and water in a medium saucepan.
- 3. Bring quinoa and water to a boil.
- 4. When the water reaches a boil, cover and simmer for 10-20 minutes.
- 5. While the quinoa is simmering, dice the tomato, onion, mango, and cilantro.
- 6. Once the quinoa has absorbed all the water and is soft, mix in one packet of taco
- seasoning.
- 7. Heat the taco shells in the microwave for 30 seconds.
- 8. Stuff taco shells with seasoned quinoa and toppings to taste. Flavor with a lime wedge.
- Yields approximately 8-10 tacos.
